These cookies are so delicious and healthy too! There is no butter or refined sugar and they can remind you of summer no matter what season it is!

Makes approximately 2 dozen.

Ingredients:

  • 2.5 cups of unsweetened coconut (medium grain). I used organic coconut so it was phosphate-free
  • 1/2 cup of honey
  • 4 egg whites
  • 1 teaspoon of pure vanilla extract

Directions:

Preheat oven to 300 degrees.

In a medium sized pot heat the honey on low heat. Once it loosens add the coconut and stir until it is mixed well.

Remove from the heat and add egg whites mixing well.

Transfer to a large bowl, add vanilla and mix well.

Once the mixture has cooled, form small walnut sized balls with moist hands and place on greased cookie sheet (I used a little cooking spray). You can place the cookies quite close because they do not spread.

Cook for 20 minutes or until golden brown. Remove from oven and let cool before you remove them from the sheet.
